50/50 mix of crackers and potato chips(plain)crumbled and mixed.
Flour seasoned the way you like it.
Lard not crappy veggie oil.
Put fish in the flour mix then dip into an egg wash then into the cracker and potato chip mix then into the pan cook until fillet is golden.
Im no chef so youll figure out the little things that Im missing but this works well on Grouse,Pheasant,Quail and Chicken also.
